Fourth of July Flan

my Fourth of July picnic flan

FLAN
6 whole eggs
1 cup sugar
2 cans evaporated milk
1/2 tsp. vanilla

SYRUP
1/4 cup sugar

Melt the sugar for the syrup in the mold over the stove. Cool.

Beat eggs. Add sugar, evaporated milk and vanilla. Pour mixture into mold. Place mold in a shallower pan. Fill outer pan with hot water to halfway up the mold. Put into a 300 degree oven for about an hour. Cool in refrigerator. Unmold into serving dish.

Turbo Roasted Lechon

(From Pia: Hello there! Long-time to comment! He he. That's awesome that you left your leche flan recipe - I was just about to ask you for it! Do you also have your lechon recipe there? Drool. Thanks so much for sharing!)

This one's for you, Pia!

pork shoulder roast (or ham, or any roast with a lot of skin on it)
salt to taste
peppercorns to taste
2 onions, chopped
5 cloves of garlic, crushed

Boil pork roast along with the rest of the ingredients until tender. Drain. Wrap with foil. Freeze overnight or longer.

Preheat turbo broiler at highest temperature setting for at least 25 minutes. Broil frozen pork roast until skin is crispy. Best served with Mang Tomas lechon sauce.

Father's Day Weekend Tacos

Father's Day Weekend Tacos

1 lb. lean ground beef or turkey
1 small onion, chopped
3 cloves garlic, minced
vegetable oil
packaged taco mix
cabbage of lettuce, finely chopped
fresh tomatoes. chopped finely
cheese, grated
sour cream
salsa
taco shells or tortillas

Saute chopped onions until translucent. Add minced garlic and cook just before it browns. Add lean ground beef and brown, making sure to break down the big clumps of meat. Drain excess oil. Prepare taco mix according to directions and add to meat mix.

Heat taco shells in oven according to package directions. Assemble tacos, starting with the beef at the bottom. Top with cabbage or lettuce, spoon some sour cream over it to hold things together, continue topping with chopped tomatoes and grated cheese, topping with salsa if desired.


LANCE prefers the soft taco version, made with tortillas instead of taco shells. Layer tortillas with above ingredients, fold over and enjoy!

LEFTOVER SUGGESTIONS: Cook two packages top ramen noodles according to package directions, add leftover cabbage, tomatoes and ground beef. top with sliced hard-boiled eggs.

Tuna Tostadas

Super Easy Tuna Tostadas

2 small cans tuna in water
1 can whole kernel corn
1 can peas and carrots
1 can diced potatoes
chopped fresh tomatoes
mayonnaise
fresh ground pepper
1 package tostadas

Drain tuna, whole kernel corn, peas and carrots and diced potatoes. put in bowl along with fresh chopped tomatoes. Add mayonnaise according to taste. Sprinkle with freshly ground pepper. Serve on top of crispy tostadas.
